Founded in 2016 by Tornike Chubinidze, Chubini Wine Cellar is a family-run, small-production winery in Kakheti focused on its international export market. They bottled their first vintage in 2017 and have since exported wine to 4 countries on 3 continents. Chubini limits their production as they prioritize producing the finest quality wine and offering their Georgian hospitality to visitors. Chubini Wine Cellar rests in the foothills of the Caucasus Mountains overlooking the fertile Alazani River Valley. Situated in Georgia’s eastern Kakheti region famous for its history of wine production, the region’s climate provides the optimal environment for cultivating rare indigenous grape varietals. The Saperavi grapes are picked early in August in the first days of veraison to ensure the highest concentration of juice and quality. After fermentation and maceration the wine is aged for 2 months in Qvevri, than transferred to stainless steel tanks for another 6 months. This gives the wine an earthy, yet fresh characteristic, with notes of cherry, black currant, spice and green peppers. A very minimal amount of sulfites are added during bottling.
