Les Freres Souliers - 2019 - Les Dessous de la Terre

Guillaume & Charles Soulier come from a wine-growing family but started in 2015, after acquiring 8 hectare in the Gard. Since then the brothers have purchased and planted more vineyards, now working with 10ha. All work in the vineyard is done by hand or with a horse, biodynamic farming and the same philosophy in the cellar. Their cellar is a few steps down the street from their winery in the small Roman village of Saint-Hilaire-d’Ozilhan. Guillaume primarily handles vineyard work, Charles primarily handles vinification. No machines are used at the domaine, meaning nothing is pumped, and everything is hand-pressed with an old vertical press. After pressing, musts are barreled on their gross lees, and are never racked. Vinification is sulfite-free and nothing is filtered or fined before bottling. (Steven Graf)
