Jean François Coutelou (Jeff for short) runs his family’s domaine in Puimuisson a few kilometres from Beziers on France’s mediterrenean coast. The farm has been certified organic since 1987 and disturbed by the monoculture of modern farming Jeff has planted thousands of trees amongst his vineyards transforming the 20 hectares of the farm to 13 planted with vines and the rest with olives, figs, almonds… (Gergovie Wines)

Quoi qu'il en goutte' translates to 'no matter what' or 'whatever it takes,' a reference to the fact that this wine is made from two vintages - Syrah and Carignan from 2019, blended with Syrah from 2020. It's a method which would make most 'proper' winemakers write some angry letters - but, objectively, this process adds layers of complexity, with newer and older stock blending together. It's a process which has been used for centuries by fortified and spirit producers.
