Vinochisti was started in 2006 by Tim Manning, an English winemaker and consultant, with his partner, Amandine Zeman. Manning does not own any vineyards and works with growers all over Italy – the very definition of a garagiste. His focus is on indigenous Italian grapes, as well as extended maceration, skin-contact, and long aging in barrel or cement. Manning bottles all his wines as Vino da Tavola allowing him a freedom to work with both Erbaluce and Sagrantino; and to support his raison d’être of Vinarchy, or wine without rules. This cuvée comes from several parcels. 25% of the grapes are whole bunch. Half of the wine is macerated for 6 months, and other half is macerated for 12 months. The blend is aged 42 months in cement tanks. (Volker)
